Scrumptious Thanksgiving Salad

Moroccan Sweet Potato Salad

Cranberry’s Executive Chef Terry has shared his favourite salad to serve to family and friends at Thanksgiving Dinner. The Moroccan Sweet Potato Salad is filled with delicious flavours and captivating colours. Follow the recipe below to “wow” your guests with a scrumptious Thanksgiving Salad!

5 lbs Sweet Potatoes, Medium Diced, Cooked

1 medium Sweet Red Pepper, Small Diced
1/2 cup Apricots, Sliced
1/2 cup Dates Pitted, Sliced
1/2 Bunch Green Onions, Sliced
1 Small  Red Onion, Small Diced
1/2 Bunch Flat Leaf Parsley, Rough Chop
1  Orange Juice & Zest
To Taste Sea Salt  

Sweet Curry Mayonnaise
2 cup Mayonnaise
1 tbsp Curry Powder
2 tbsp Honey
1 Lime, Juice & Zest
2 pinches Cayenne or Crushed Red Chilies – optional
To Taste Sea Salt
To Taste Black Pepper, Fresh Ground

1/4 cup Cranberries Dried
1/4 cup Pumpkin Seeds Toasted

1 – Peel & dice Sweet Potatoes, boil lightly in salted water, drain, & set aside to cool.
2 – Cut up Red Peppers, Apricots, Dates, Green Onions, Red Onions, and Flat Leaf Parsley, as  directed, mix together with Diced Sweet Potato, Orange Juice, Zest, & Salt.
3 – Make Sweet Curry Mayonnaise (mix ingredients together).
4 – Mixed everything together (except garnish), taste & adjust seasoning, wrap and place in the refrigerator until needed.
5 – Garnish with Dried Cranberries & Toasted Pumpkin Seeds just before serving.
